We personally select each ingredient from producers who respect the land and time. Our technique serves flavor, not the reverse. We reduce, distill, and elevate to reach the very heart of each element.

My cuisine is not a list of ingredients, but a story of seasons and gestures. I am Riccardo Viola, and I founded Locanda del Sapore on a simple principle: respect.

Respect for the time nature takes to offer its bounty, and for the memory of authentic flavors—those capable of evoking a memory with a single taste. My journey begins far from the stoves, in daily dialogue with small-scale farmers, fishermen, and artisans who, like me, believe in the value of patience and care.

We envisioned a space that would be the natural extension of our philosophy: essential, textural, and sincere. Clean lines, soft lighting, and carefully considered details create an intimate and welcoming atmosphere, designed not to dazzle, but to put you at ease.
